New Year’s Day Brunch at Ambergris Caye’s Beautiful Matachica Resort
My first meal of 2024 was a special one. It was brunch, my favorite of all the meals. That perfect mix of savory, sweet, and coffee. PLUS, it was my prize for winning an Instagram raffle from Mambo Restaurant at Matachica Resort.
New Year’s Day brunch for 2. Great meal, good luck, and a fantastic view. It is the perfect way to ring in the new year.
For those who don’t know Matachica Resort, it’s located at about 5 miles north, Ambergris Caye. Check out my overnight there a few years back -it’s gorgeous.

I especially love the Jankunu Garifuna dancer.
A cup of coffee ordered, I stepped outside to take some more photos. Each day, so far, in 2024 has been better than the last. Weather perfection.
Back to my seat to order…and enjoy this view.
This is a GENEROUS amount of food! I’ll need to be strategic.
You might think that you do NOT want to fill up on toast and pastries, but you’d be wrong. Matachica’s bakery is the best on the island. I’m not even a toast person but this homemade pineapple jam…not too sweet. I polished off the pots of these spiced jewels slathered all over the buttery toast.
The pastries and muffins are to die for. I only ate 2 of these – and brought the muffin home for later. So delicious.
And then I had the eggs benedict. And can confidently declare that all eggs benedict should be served on warm johnny cakes from this day forward. SOOOO good.
The chicken curry salad was delicious too.
I had no room for dessert – which is obviously a huge downer – and I didn’t have the bottomless mimosa.
But man it was all delicious. And the beautiful surroundings…really a perfect way to start the year.
They are doing monthly giveaways at Mambo Restaurant (I believe the first one was Thanksgiving Dinner for 2) – so follow them on Instagram and you might be next…
Mambo Restaurant is now doing special brunches on special occasions. I believe the next one is for Valentine’s Day (YES!) and then Mother’s Day…

I’ve messaged BEL, Town Council and San Pedro Sun regarding the Iguana Sanctuary. Had quite the back and forth with Tamara at the Sun regarding BZ law that forbids feeding wildlife. I know the law is not enforced, as my husband is a scuba diver and has witnessed plenty of “chumming the water” during dives. Anyway, she said it was going to be front page tomorrow and she would publish my letter and talk about the debate over feeding wildlife.
